Last year I used DT Register on a charity cycle event taking over a 1,000 entries and it worked great.

I want to use the same event information, fields, costs etc. which took ages to set up on an upgraded version of the site running J2.5

Is there a simple way to export/import everything so all of the settings, fields, customised emails etc. are preserved?

Migration instructions are in the readme file of the 2.5 version. Follow those exactly. Good luck - I've not been able to get it to work :D

I found the steps, but I don't know how to do this:

2. Export all DT Register database tables from your 1.5 site database. These tables will all begin with "jos_dtregister". Your site may use a different prefix than "jos_" so be aware of that.

Where do I find these tables??

That refers to the database tables. You have to access your mySQL database through phpmyadmin or something similar.
